Apple French Toast with Flax
Seeds

1 tbsp. ground flax seeds

3 tbsp. apple butter

¾ soy or rice milk

pinch of nutmeg

pinch  of cinnamon

pinch of salt

1 tsp. canola oil

4 large slices multigrain bread*

Combine ground flax seeds, apple butter, soy or rice milk, nutmeg, cinnamon and salt in a blender and mix until smooth.  Transfer to a shallow pan.  Heat a large sauté pan over medium heat and add canola oil.  Dip both sides of bread into milk mixture and transfer to pan.  Cook until golden brown on both sides.

Serves: 4

*Alternative: substitute gluten free bread to make it GF and WF
