Gluten Free Crab Cakes

1 pound jumbo lump crabmeat

1 tbls. chopped parsley

1 1/2 tsp. Old Bay seasoning

2-4 Tbls. quinoa flakes

1/4 cup light mayonnaise

dash pepper

2 egg whites

Mix all ingredients except crabmeat.  Gently mix crabmeat with rest of ingredients.  Form into  4 patties and place on plate, cover loosely and refrigerate for at least 30 minutes.  Preheat oven 350 degrees.  Spray a baking sheet with canola oil spray and heat in oven for 1 minute.  Remove from oven and place crab cakes on cookie sheet.  You will hear a sizzle.  Return to oven and bake for 15 minutes or until the top is lightly brown
