Healthy Pancakes

½ cup old fashioned oatmeal

¼ lowfat cottage cheese*

4 egg whites

¼  tsp. cinnamon

1 tsp. vanilla extract

Process the oatmeal, cottage cheese or tofu, egg whites, vanilla extract, cinnamon and nutmeg in a blender until smooth.  Spray a nonstick skillet with cooking spray.  Add the batter and cook over medium heat until both sides are lightly browned.

Serves: 1

*Alternative: substitute tofu to make it dairy free
