Orzo Pasta with Thai Chicken or Tofu

1/2 cup orzo lentil bean or brown rice pasta

1 Tbsp. canola oil

2-3 cloves garlic, minced

1 red or yellow bell pepper diced

1/2 tsp. fresh minced ginger

3 skinless boneless chicken breasts diced or 1 lb. tofu drained and diced

Cook orzo pasta in water until tender and drain.  Heat oil in nonstick skillet over medium-high heat.  Add garlic and pepper and stir until softened.  Add ginger, diced chicken or tofu and stir fry until chicken is tender, or tofu is lightly browned.  Add orzo and mix well.  For added protein or crunch add sliced almonds, cashews or peanuts.
