Pineapple Surprise

16 oz. firm tofu

½ cup thawed pineapple juice concentrate

3 Tbsp. light agave nectar or honey

2 Tbsp. walnut or almond oil

1 can crushed pineapple (no sugar added)

¼ cup chopped walnuts (optional)

Drain the tofu for 20-30 minutes, pressing it between cotton towels to extract as much moisture as possible.  Crumble with a fork.  Place the juice concentrate in a blender.  Add the tofu, 1/3 at a time, and process until smooth after each addition, stopping to scrape as necessary.  With the blender running, slowly add sweetener and oil.  Blend well and pour into a bowl.  Drain the pineapple and save the juice for another time.  Stir into the tofu mixture.  Chill for at least 1 hour. Spoon into individual serving dishes.  Top each serving with walnuts (optional).
