Roasted Vegetables

1 pound vegetables (asparagus, brussel sprouts, squash or cauliflower are excellent choices)

2 teaspoons olive oil

PREHEAT oven to 450 degrees

PLACE vegetable in aluminum pan

POUR olive oil on top of the vegetable, try to make sure it is distributed evenly

PLACE the aluminum pan in the oven at 450 degrees for 30-45 minutes (depending on the vegetable and quantity)

TURN the vegetables when cooking is half done

Serves: 2-3
