Tasty Quinoa Cranberry Salad

2 cups low sodium all-natural chicken broth

1 cup quinoa

3 sliced scallions

1/4 cup sliced almonds

1/4 cup dried cranberries

Rinse quinoa in a mini strainer. Put broth and quinoa in saucepan, bring to a boil, and reduce to simmer.  Simmer until broth is absorbed, about 15 minutes.  Fluff with fork. Add scallions, almonds and cranberries.  Taste and add some black pepper if desired.
